Zaatar Roll Recipe


The Zaatar Roll is very easy to make, and it is a perfect finger food or snack to have all day long. The word Zaatar refers to wild thyme herbs that grow in Lebanon & Middle Eastern wilderness. Standard ingredients include: thyme (or Zaatar), sumac, sesame seeds & Zeitouna Olive Oil. You can find Zaatar at Middle Eastern grocery stores. In Lebanon, Zaatar is part of our daily breakfast table, where we would mix it with the best Olive Oil and spread it on a flatbread and bake it to make Manooshe. Also, you can have Zaatar with Labneh, or as a dip to have with Lebanese bread

Zaatar is the Peanut Butter of the Middle East! 

Ingredients:

  • Zaatar Mix
  • Zeitouna Extra Virgin Olive Oil
  • Puff Pastry

Method:

  • Mix the Zaatar with Zeitouna Extra Virgin Olive Oil until you get a smooth paste. Only use Extra Virgin Olive Oil. As you will need a low acidity olive oil to capture the true taste of Zaatar.  
  • Spread the Zaatar paste on the Puff pastry sheet, and roll the dough with your hand until you get a sausage shape.
  • Cut the sausage every 3-4 cm and place the rolls in a greased pan.
  • In a preheated oven (180°C), bake the rolls for 20 minutes (or until gold & crisp) reversing top to bottom, to make sure it bakes evenly.
